Time to eat right this summer
If you think you can just follow the same old diet you have been doing the whole year, well, you're not wrong, but summer is destined for something different. In the season of steamy heat, there's nothing better than cleansing your body with this simple and healthy Summer Berry Salad with Green Goddess Dressing. So roll your sleeves and let's make this refreshing salad!
Summer Berry Salad
3 cups Mixed Greens ½ cup Strawberries, sliced 1/3 cup Blackberries 1/3 cup Blueberries ¼ cup Crumbled Feta ¼ cup Candied Pecans 2 Tbsp Mint 2 Tbsp Basil
½ cup Pecan Halves 2 Tbsp Dark Brown Sugar 2 Tbsp Maple Syrup Pinch of Salt
Green Goddess Dressing
¼ Cup Sour Cream ¼ Cup Mayonnaise 3 cloves Garlic 1 Tbsp Green Onion 2 Tbsp Italian Parsley 1 Tbsp Cilantro 1 tsp Rosemary Salt & Pepper, to taste
- Preheat oven to 375 degrees.
- In a large bowl combine the mixed greens, berries and feta. Cut the mint and the basil, and toss them into the salad.
- Crush or chop the pecans. In a separate bowl, combine the pecans, brown sugar, maple syrup and salt and mix so that all the pecans are coated. Lay the mixture out on a sheet tray covered in parchment paper. Bake in oven for approximately 10-15 minutes, checking every 5 minutes. Stir as needed so that the nuts cook evenly. Once done, set aside to cool. When the nuts are cooled completely, add them to the salad.
In a food processor or blender, combine the sour cream, mayo and herbs until the mixture turns an even green color. Add salt and pepper to taste.
Serve the Summer Berry Salad tossed with the Green Goddess Dressing or on the side.
