Ingredients

 
  • Arborio Rice - 16 oz ( prepared) 
  • Egg - 1 (beaten)
  • Pesto - 10 oz
  • Shredded parmesan - 4 oz
  • Panko - 4 oz
  • Egg wash - 2 eggs mixed with 1/4 cup water
  • AP Flour - 2 oz
  • Salt and Pepper - 1/2 teaspoon each
 
 
 

Directions

- Cool Rice, mix beaten egg, pesto, parmesan, and salt and pepper

-Form into tablespoon size balls

-Bread by rolling in flour in flour, dip in egg wash

-Roll in panko

-Fry until golden brown at 350

(Can be frozen before eaten date)
